Honey Lemon Fruit Bowl

If there is a recipe that can get a Gold Medal every time, I would bet on a fruit bowl. I have never tasted a bad fruit bowl recipe, and here is the reason why. All you are doing is taking your favorite fruits and making a beautiful melody of color that is sure to captivate even the pickiest palates.

I make fruit bowls quite often. It’s a beautiful dish and it is packed full of nutrients. Very seldom do I add honey, I like the natural flavors of the berries and watermelon, but sometimes you just have to spruce it up.

The Preparation

When you cut the bottom of your watermelon, be careful not to cut too far inward.

This is a mistake I made from cutting too deep.

If you cut your watermelon too deep, don’t worry, just get some aluminum foil and cover the base. If you want to make it look festive add apples, and oranges around the base for a fruity watermelon platter.

This is what you want. Finely sliced off just a little bit.

Do you have an ice cream scooper? I learned through trial and error this is the best device for scooping watermelon. All you do is turn the scoop in, turn, and pull out. It takes maybe 10 minutes from beginning to end, and I have better control of how deep I scoop out the watermelon.

If you don’t have an ice cream scooper, use a metal spoon and make smaller scoops to make sure you don’t puncture the watermelon.

Choose your fruits

What are your favorite fruits? Pick your top two, and use them. I have used apples, cherries, blueberries, raspberries, pineapple, mangos, the list goes on.

I had kiwis, grapes, and strawberries on hand.

But I must warn you, bananas don’t work so well. If you want to add bananas, wait until it’s time to serve.

Once you are finished preparing your fruit bowl, you can dive in and enjoy it right then. I usually have other recipes to whip up so I always chill for 30 minutes, but you DO NOT have to wait.

Simply Irresistible Banana Pudding

This banana pudding is simply irresistible because there is no baking and in less than 25 minutes, you will have a homemade dessert that will be one for the record books.

There is something about bananas and vanilla wafers that go together like peanut butter and jelly. My mom was the queen of desserts, and this is one dessert that makes me feel nostalgic every time I taste this.

This recipe will use cream cheese and lemon juice, and it is the best thing since sliced bread. The creaminess and slight twang from the lemon, accent the rich fruity flavor of the ripe bananas, givingthe vanilla wafers an extra sweetness your palate will thank you for.

For the best outcome use an electric mixer, it helps to get out any lumps from the cream cheese, and adding the vanilla pudding will have it blended into creamy goodness.

See how the pudding is smooth and slightly thick. That’s thanks to the cream cheese. Blend on medium-low, and don’t forget to use a spatula to scrape the sides.

A secret that has worked wonders, before starting the recipe, go ahead and cut up your bananas and squeeze fresh lemon juice over the slices. It will keep the bananas from turning brown quickly and add to the flavor of the banana pudding.

Start your layers with cookies and then bananas. Once the bananas are added, it will be easier for the vanilla wafers to stay placed on the side. Notice how the bananas still look freshly cut; that’s the lemon juice, it helps the bananas from turning brown.

When you pour the pudding mixture on top make sure you pour enough to get into the nooks and crannies and repeat with vanilla wafers and bananas, and pudding.  When you are finished with your layers, make sure to crumble up some of your leftover vanilla wafers for a pretty garnishment on top. It doesn’t matter how big or small the crumbles are.

You can also add whip cream if you would like or eat it like this.  I hope you enjoy it.

  • 1 9x13 cake pan

  • 2 box vanilla wafers
  • 7 bananas
  • 1 package cream cheese
  • 1 can sweetened condensed milk (14oz)
  • 1 package vanilla pudding
  • 1/4 cup lemon juice
  • 1 tsp vanilla extract

  • Using your electric mixer, mix the package of cream cheese and lemon juice on med-low. Add the sweetened condensed milk and vanilla, mixing until smooth and creamy.
  • Follow the vanilla pudding instructions and add to the cream cheese mixture.
  • Slice the bananas and drizzle with a bit of lemon juice. It stops the bananas from turning brown, set aside.
  • Layer your dish with vanilla wafers and then bananas. Take some of your cream cheese mixture and spread it evenly on top. Repeat steps until all your bananas, vanilla wafers, and pudding mixture have been used. You may have vanilla wafers still left and that is ok. You can use some for later.
  • Take some of your leftover vanilla wafers and crumble them up for a nice garnish you can sprinkle across your banana pudding.

You can make this overnight for the flavors to set, or at least make and let chill for a few hours before serving.

Easy Delectable Brownies

I have an easy and delectable brownie recipe that is sure to be a family favorite. During the winter months, I find myself making little goodies for my children, and I wanted to share a special treat with you.

The best thing about this brownie recipe is it is so versatile. In this recipe, I am using the hot cocoa mix as a creamy delight, but you can spruce up your brownies using moose or pudding.

I made marshmallow brownies and used marshmallow cocoa for added flavor.

The only thing you want to do is add an extra egg and increase the milk ratio. I have used evaporated milk as well, and the flavors come out so rich and creamy.

For an added bonus, add your favorite toppings.  I made these brownies during Christmas, I used icing, marshmallows, and Christmas sprinkles.

You can use an array of toppings, from nuts, dried fruits, whipped cream, and caramel or chocolate sauces. Let your imagination run wild.

You can see the marshmallows from the hot cocoa mix if you look inside the brownie. This recipe came out fantastic.
