Easy Delectable Brownies

I have an easy and delectable brownie recipe that is sure to be a family favorite. During the winter months, I find myself making little goodies for my children, and I wanted to share a special treat with you.

The best thing about this brownie recipe is it is so versatile. In this recipe, I am using the hot cocoa mix as a creamy delight, but you can spruce up your brownies using moose or pudding.

I made marshmallow brownies and used marshmallow cocoa for added flavor.

The only thing you want to do is add an extra egg and increase the milk ratio. I have used evaporated milk as well, and the flavors come out so rich and creamy.

For an added bonus, add your favorite toppings.  I made these brownies during Christmas, I used icing, marshmallows, and Christmas sprinkles.

You can use an array of toppings, from nuts, dried fruits, whipped cream, and caramel or chocolate sauces. Let your imagination run wild.

You can see the marshmallows from the hot cocoa mix if you look inside the brownie. This recipe came out fantastic.

Delectable Easy Brownies

This is as easy as it comes to making a rich and delectable dessert. All you need is a few household ingredients, and you will have a crowd-pleasing dessert ready in 45 minutes.

  • 1 9x9 baking pan

Ingredients
  

  • 1 box brownie mix
  • 4 packages hot cocoa mix, any flavor
  • 1 cup milk
  • 3 eggs

Instructions
 

  • Grease your baking dish, Follow baking directions on your box for heating temperature.
  • For best results use a mixer. In a mixing bowl add your dry ingredients.
  • Turn the mixer to low and add your eggs and milk slowly. If you pour it in too fast it will be lumpy,
  • After it has been mixed for about a minute pour in your greased pan.
  • Bake for 35 minutes. Check with a toothpick and make sure the middle is cooked. Add your favorite toppings
  • Enjoy!

Southern Potato Salad

This southern potato salad recipe is a classic side dish that compliments any dinner. It is easy to make in under 20 minutes and sure to be a crowd-pleaser. This traditional side goes well with ham, cornish hens, turkey, and even oxtails with gravy.  Add collard greens and candied yams, and dinner is made.

Southern Potato Salad

This creamy potato salad will be a great addition to any dinner. Just a few household ingredients and it is ready.

Ingredients
  

  • 6 large yellow potatoes cut into cubes, 1 inch is fine
  • 4 hard-boiled eggs diced
  • 1/2 cup mayo
  • 1/4 cup sweet relish
  • 2 celery stalk diced fine
  • 1/2 sweet onion diced
  • 1 tsp white sugar
  • 1 tbsp yellow mustard (optional)
  • 1 tbsp sea salt or salt of your choice
  • 1 tbsp black pepper
  • paprika for garnish

Instructions
 

  • Bring a large pot of water to a boil, add 2 teaspoons of salt and potato cubes
  • Boil for 10 minutes. You don't want to overcook the potatoes, they will get soft and mushy.
  • Drain the potatoes and pour them into a large bowl.
  • Add relish and stir. The vinegar keeps the potatoes from turning that grey color.
  • Add all ingredients to yor bowl and refrigerate for at least an hour for the flavors to come together.

Notes

To get the most flavor from this recipe make it the night before, all the ingredients will have a chance to set and come together into a beautiful side dish.

Southern Deviled Eggs

Classic deviled eggs that compliment any meal, appetizer, or have as a snack.

Ingredients
  

  • 6 hard boiled eggs
  • 1/4 cup mayo
  • 1 tsp yellow mustard
  • 1/4 tsp onion powder
  • 1 tbsp sweet relish
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions
 

  • Peel and rinse off boiled eggs
  • Slice in half lengthwise and place on platter or dish of your choice.
  • Scoop out yellow yolk carefully, and place in a medium size bowl.
  • Take a fork and mash the yolk until there are hardly any lumps.
  • Add dry ingredients, mayo, yellow mustard, and relish. Stir and scoop a small spoonful into the white part of each egg.
  • Refrigerate for at least 30 minutes to allow flavors to set.

Notes

Sprinkle smoked paprika over your deviled eggs for a beautiful garnishment and extra kick of flavor.

These roasted cornish hens are perfect for a romantic date night or impressing your guests. It takes minimal effort but the flavor and aroma will make everyone think it took hours.  All you need is a few household ingredients and dinner will be served.This recipe goes great with sauteed carrots, oven baked macaroni and cheese, collard greens, or even a nice garden salad.

Ingredients
  

  • 2 Cornish hens
  • 1 Carrot cut into pieces
  • 1 Onion cut into pieces
  • 1 Tablespoon salt
  • 1 Tablespoon black pepper
  • 2 Tablespoons of rosemary
  • 2 Tablespoons of Thyme
  • 3 Tablespoons of olive oil

Instructions
 

  • Grease your baking pan.
  • Clean and dry your cornish hens.
  • Season the cornish hen cavities: 1 Tablespoon of rosemary, 1 Tablespoon of thyme
  • Stuff cavity with onions and carrots
  • Mix olive oil and herbs together
  • Massage on the cornish hens thoroughly.
  • Bake on 350 for 1 hour.

Notes

I like the add extra carrots and onions to my cornish hens. Its an easy side dish. Just add as many carrots and onions as you like.

Garlic Butter Holiday Turkey

Every year families look for the perfect turkey recipe. DO you ever have it buttery and brown, but the breast is dry? How about the bird is juicy but it still looks raw? Have you ever baked it so well, but t fell off the bone before it came out the pan? I have a great recipe below that may help with the holiday turkey dilemma.No one wants the dried-out turkey breast, and this fool proof recipe will have your fighting for the breast. Every piece of the turkey is succulent, roll up your sleeves and enjoy this recipe.

Ingredients
  

  • Turkey any size I use a 20 pound turkey so my turkey cavity is larger.
  • 2 sticks of butter
  • 2 onions
  • 1 carrot
  • 1 whole garlic
  • 2 Tablespoons of garlic powder
  • 1 Tablespoon of onion powder
  • 1 Tablespoon of ground sage
  • 2 Tablespoons of kosher salt salt of your choice
  • 2 Tablespoons of black pepper
  • 1 celery stalk
  • 1 cup of water

Instructions
 

  • Clean and dry your turkey. A dry turkey will hold onto the butter mixture better.
  • Use a large roasting pan, you will have a lot of turkey broth.
  • Sprinkle 1 Tablespoon of salt and pepper inside the turkey cavity
  • Cut an onion in half and push both pieces inside turkey cavity.
  • Add the whole garlic
  • Cut your carrot into pieces and push inside turkey cavity
  • Cut celery stalk and push celery inside as well.
  • Dice the other onion into pieces.
  • Lift the skin of the turkey and push the onion pieces in side as far as you can.
  • Pour one cup of water in the bottom.

Notes

Directions for butter mixture:
Mix butter, garlic powder, onion powder, ground sage together.
Add 1 Tablespoon of salt
Add 1 Tablespoon of pepper
Mix well

Slow Cooked Collard Greens

 

Slow Cooked Collard Greens

I feel there is nothing like some good southern collards,. I love to eat them as a meal with cornbread, or as a side with ham or oxtails. This recipe is easy to make and smells so wonderful in the slow cooker.
Servings 8

Ingredients
  

  • 2 pounds of collards cleaned
  • 1/4 bell pepper diced
  • 1 onion diced
  • 1 smoked turkey leg
  • 3 Tablespoons of garlic powder
  • 3 Tablespoons of onion powder
  • 1 Tablespoon of sugar optional
  • 1 Tablespoon of crushed red pepper
  • 2 Tablespoons of Kosher Salt salt of your choice
  • 1 teaspoon of liquid smoke
  • 2 Cups of water or chicken broth
  • 1 Bay leaf

Instructions
 

  • Directions to sauté you collard greens:
  • Get out you favorite oil, I use olive oil, and use a tablespoon of oil. Get the pan hot
  • Add a BIG HANDFUL of collards, turn down the pan to medium high and stir. They will start to shrink and change color quick. Cook for 7-10 minutes.
  • As the collards cook down put them in the slow cooker, and repeat process until all the collards have been cooked down.
  • Directions for slow cooking collard greens:
  • Turn your slow cooker to LOW.
  • Add the smoked turkey wing, diced onions, and peppers to the slow cooker.
  • If you sauteed the greens add them on top of these items. If you are slow cooking fresh, just add the collards.
  • Add your water or chicken broth. I like for my water to be barely visible from the top of the greens. Tge greens will continue to shrink so more juice will be made.
  • Add seasonings last.  Make sure to remember where you added your bay leaf.
  • Remove the bay leaf before eating.

Notes

I sauté my collards before I put them in the slow cooker for 10 minutes, in sections. Collard greens are giant leafy vegetables, but when they cook, they shrink. I prefer to start the process and get this going, so my greens can all fit in the slow cooker.

Southern Candied Yams

Fall is the time of year that I cant help but want some tasty southern candied yams. I love how they compliment any meal, and they are my go-to comfort food. This recipeis a great addition to collard greens and oxtails. They are so good you will be eating it alone.

Ingredients
  

  • 5 yams peeled and cut to your liking
  • 1 lemon squeezed
  • 1 stick of melted butter
  • 1 cup of brown sugar
  • 1 cup of white sugar
  • 1 teaspoon cinnamon
  • 1 pinch of salt
  • 1 pinch of nutmeg

Instructions
 

  • Grease your baking pan
  • Line you potatoes in the pan how you like.
  • Take the melted butter and pour over the yams
  • Mix your sugar, salt, cinnamon, and nutmeg in a bowl and pour over the yams evenly
  • Bake covered on 350 for 45 minutes, Uncover and scoop the juice over your yams.
  • Finish baking for 20 more minutes.
  • Let set for 10

Notes

When you cut your yams, MAKE SURE they aren't too thin or too thick. You want them to cook evenly. If they are cut at different sizes, they may fall apart.
