Easy Seafood Boil

This is a quick go to when you want the seafood boil experience but without the hassle of a list of elaborate ingredients. Trust me this is fail proof with plenty of flavor.

Ingredients
  

  • 3 can of beer any flavor I use Coors
  • Any seafood of your choice
  • Whole garlic
  • Whole onion
  • 3 bay leaves
  • Zatarain’s Crab and Shrimp boil concentrate
  • 2 cups of water
  • 6 ears of corn
  • 6 yellow potatoes or red potatoes

Instructions
 

  • Bring beer and water to a boil
  • Add the whole onion, whole garlic, bay leaves, and a 1/2 teaspoon of the Crab and Shrimp Boil Concentrate.
  • Add potatoes and corn to pot, reduce heat to medium high. Cook for 15 minutes. (Optional if you have sausages, boil them with the potatoes and corn)
  • Add your seafood. Crab, mussels, crawfish, shrimp, clams, and continue to boil for 20-25 minutes

Notes

Drain your seafood and you are ready to eat. I sprinkle my seafood with
Onion powder
Garlic powder
Lemon pepper
Kosher salt
You can also whip up a quick sauce using
2 sticks of melted butter
1 Tablespoon Lemon pepper
1 Tablespoon Garlic powder
1 Tablespoon of Old Bay
Melt butter on the stove, add seasonings and in 5 minutes the sauce is ready.

This is the perfect fall side that is easy to make and quick to prepare. When I don't use my slow cooker, I love to use a cast iron skillet for my cooking. The cast iron brings out the richness in the food and it reminds me of the old timey country dinners.

Ingredients
  

  • 1 medium cabbage
  • 1/2 onion
  • 1/2 bell pepper
  • 1 teaspoon of garlic
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon crushed red peppers
  • 1 Tablespoon of salt
  • 1 Tablespoon of pepper
  • 1/3 cup of water
  • sprinkle of white sugar optional

Instructions
 

  • In a large pot, I use a large cast iron skillet, add oil and preheat pan
  • Dice cabbage, onion, and bell pepper and add to skillet. Make sure it is on medium high and stir often.
  • As the cabbage begins to fry add all your seasonings to the pan.
  • Slowly add a few drops of water to the pan, you will see the cabbage drippings turn brown, STIR, that is the flavor. The water will evaporate quickly.
  • Turn heat down to medium low and add a sprinkle, a baby spoon of white sugar. You do not have to add sugar, completely optional.
  • Simmer for 20-25 minutes.

Sometimes you want the ease of comfort food without the hassle. You can alter this chowder recipe to your liking, plug in the slow cooker and go.

Total Time 8 hrs 10 mins

Equipment

  • slow cooker

Ingredients
  

  • 5 yellow potatoes diced
  • 1 package of smoked turkey legs
  • 1 can of whole corn draine
  • 1 can of cream of chicken
  • 1 bay leaf
  • 1 Tablespoon
  • 1 tablespoon salt
  • 1 Tablespoon Pepper
  • 1 Tablespoon Thyme
  • 1 Tablespoon Rosemary
  • 1 Tablespoon Garlic Powder
  • 1 Tablespoon Onion Powder
  • 1 cup of sharp or mild cheddar
  • 5 cup of water

Instructions
 

  • Add all your ingredients into the slow cooker and put on LOW for 8 hours. One hour before serving add cheese and stir.
  • Enjoy!!!

Notes

Make sure to REMOVE BAY LEAF before eating

Oven Baked Pancakes

There comes a time in everyone’s life when you want the pancakes but not the hot greasy mess it takes to flip a flapjack. I for one don’t.

I want to share with you a quick and easy recipe that will have your pancake needs fixed fast. All you need is an oven and 25 minutes.

To make them use a 9×9 baking pan. It was the right thickness and I was able to feed a family of four. All you need is a spatula and some pancake syrup and breakfast is done.

I usually add fruit toppings to my pancakes, try strawberries, bananas, blueberries, and even a drizzle of honey will give your pancakes a nice sweet kick.

Have you ever wanted the pancakes but not the hassle? I have the easiest pancake recipe. All you need is a few minutes of prep time and a heated oven.
Prep Time 5 mins
Cook Time 20 mins
Total Time 25 mins

  • I use a 9 X 9 square pan for mine. You can experiment with the size of your choice.

Ingredients
  

  • 2 cups of pancake mix
  • 1 1/2 cups of milk I always substitute with milk

Instructions
 

  • Preheat oven to 375 degrees
  • Grease your pan with the oil of your choice
  • Mix pancake mix with milk and pour into pan
  • Cook for 15-20 minutes

Notes

Oven-baked pancakes are so delicious without pan-frying. I love to top mine with different fruits, cinnamon, pumpkin spice, and honey. You can always take the traditional route and have warm syrup with butter.

Slow Cooked Oxtails

If you ever ask me my favorite southern meal, I will always say oxtails and gravy. There is something about how the flavors of the meat and gravy combine with some southern sticky rice, I fall in love every time.

I love to start off my recipe by frying the oxtails before I put them in the slow cooker, it keeps the oxtail meat in place while slow cooking. As I fry my oxtail in batches I like to preheat my slow-cooker too high to get it warming up, it helps with the cooking process.

See how I lightly browned each oxtail, and they are holding in place.

I use a 10-quart slow cooker, the size is large but having 4 lbs of oxtails, I need the room

Make sure you cover the oxtails with your liquid. You can use water, chicken broth, and vegetable broth. Play around with your flavors, you may be surprised by what you create.

Slow Cooked Oxtails

This dish is a simple yet flavorful dish the entire family will love. I usually buy my oxtails from Sam's Club or BJ's because I can get a nice size quantity for a reasonable price. If you know anything about oxtails, you know it's not a lot on the bone. With this recipe, you don't want to fight over the oxtails. These oxtails has been browned and then added to the slow cooker for a succulent, mouthwatering gravy. These oxtails go so well with rice and green beans. Try with mashed potatoes, nothing will be left.

Equipment

  • slow cooker

Ingredients
  

  • 4 Pounds of Oxtails
  • 1 Large Onion
  • 4 Tablespoon of Kosher Salt your choice of salt
  • 1 Tablespoon of Pepper
  • 1 Tablespoon of Thyme
  • 1 Tablespoon of Rosemary
  • 1 Tablespoon of Garlic Powder
  • 1 Tablespoon of Onion Powder
  • 1 Bay Leaf
  • Olive Oil
  • Flour to thicken gravy

Instructions
 

  • Set your slow cooker to high. It is best to have a warm to hot slow cooker for when you add the oxtail.
  • Grease your slow cooker. Helps keep oxtails and onions from burning at the bottom.
  • Mix ALL dry ingredients together and rub on your oxtails
  • Brown on stove with olive oil.
  • Cut up your onion and put in bottom of your slow cooker.
  • Add oxtails to slow cooker
  • Take 2 cups of water and 1 Table Spoon of flour, add to the pan of oxtail drippings and stir, take the juice and pour over your oxtails in the slow cooker. Make sure the juice is covering your oxtails, if not add water or broth until oxtails are covered.
  • Add the bay leaf
  • Cook on HIGH for 4-6 hours, or LOW for 8 hours.

Notes

Oxtails goes great with rice, mashed potatoes. The gravy is so good… you will want to eat it with biscuits, too.
