Homemade Crab Meat Sushi Rolls

I did it!!! I made homemade crab sushi for our family movie night, and it was a complete success.

I love sushi. I love the different flavors, but my all-time favorite is California Sushi Roll. It’s simple but flavorful, and I love it with wasabi and soy sauce. Due to the rise in cost of going out to eat and groceries, I had to do without my beloved sushi until I finally made it.

I don’t have a sushi roller, but I did roll it with my hands, and I must say I am pretty impressed with myself. If I can do it, I know you can.

You can use anything inside your sushi, but I like crab meat, and I felt more confident in using a salad mixture than just veggies.

Speaking of veggies, I sliced my carrots, cucumbers, and celery into thin slices. I watched quite a few youtube videos, and I just went with the flow.

See how the veggies are not cut perfect? I didn’t spread my meat evenly, but I tried. I’ll get it down pack next time!

Make sure you chill them covered in the refrigerator for at least 30 minutes. The seaweed wraps were tearing when I tried to cut them.

Make sure to have some wasabi, soy sauce, and pickled ginger to add to the sushi. I promise you; you will not be disappointed.

Homemade Crab Meat Sushi Rolls

Crab meat sushi rolls with carrots and celery
Prep Time 25 mins
Total Time 25 mins

  • 4 sheets Nori Sushi Sheets/Wraps
  • 2 cup cooked crab meat
  • 1/2 package cream cheese
  • 1 tbsp mayo
  • 1 tbsp soy sauce
  • 1 tsp sea salt
  • 1 tsp white or black pepper
  • 1 tsp onion powder
  • 1 carrot
  • 1 celery stalk
  • 1 cucumber

  • In a medium bowl, separate your crab meat until it is flaky. You can have it clumpy but remember it has to fit inside the sushi sheet, and we have to fold it.
  • Next, add mayo, cream cheese, onion powder, salt, pepper, and soy sauce. Stir until you have a nice crabmeat salad.
  • Cut your cucumbers, onions, and carrots into little sticks or strings. You can use a vegetable shredder if you would like. Make sure to use a paper towel to dry out any moisture in your vegetable sticks.
  • Get your sushi sheet and smear the crab meat on top. Be careful because the sheets are thin. Add your veggie strips in the middle.
  • Roll the sushi wrap away from you, be firm in your roll but not too tight. To help the edges stay closed, you can add some crab meat mixture to the edges or a little water.
  • Refrigerate for at least 30 minutes for the mold to hold. Use a sharp knife to cut into sushi pieces or eat whole. Enjoy.

Simply Irresistible Banana Pudding

This banana pudding is simply irresistible because there is no baking and in less than 25 minutes, you will have a homemade dessert that will be one for the record books.

There is something about bananas and vanilla wafers that go together like peanut butter and jelly. My mom was the queen of desserts, and this is one dessert that makes me feel nostalgic every time I taste this.

This recipe will use cream cheese and lemon juice, and it is the best thing since sliced bread. The creaminess and slight twang from the lemon, accent the rich fruity flavor of the ripe bananas, givingthe vanilla wafers an extra sweetness your palate will thank you for.

For the best outcome use an electric mixer, it helps to get out any lumps from the cream cheese, and adding the vanilla pudding will have it blended into creamy goodness.

See how the pudding is smooth and slightly thick. That’s thanks to the cream cheese. Blend on medium-low, and don’t forget to use a spatula to scrape the sides.

A secret that has worked wonders, before starting the recipe, go ahead and cut up your bananas and squeeze fresh lemon juice over the slices. It will keep the bananas from turning brown quickly and add to the flavor of the banana pudding.

Start your layers with cookies and then bananas. Once the bananas are added, it will be easier for the vanilla wafers to stay placed on the side. Notice how the bananas still look freshly cut; that’s the lemon juice, it helps the bananas from turning brown.

When you pour the pudding mixture on top make sure you pour enough to get into the nooks and crannies and repeat with vanilla wafers and bananas, and pudding.  When you are finished with your layers, make sure to crumble up some of your leftover vanilla wafers for a pretty garnishment on top. It doesn’t matter how big or small the crumbles are.

You can also add whip cream if you would like or eat it like this.  I hope you enjoy it.

Course Dessert
Servings 10

  • 1 9x13 cake pan

  • 2 box vanilla wafers
  • 7 bananas
  • 1 package cream cheese
  • 1 can sweetened condensed milk (14oz)
  • 1 package vanilla pudding
  • 1/4 cup lemon juice
  • 1 tsp vanilla extract

  • Using your electric mixer, mix the package of cream cheese and lemon juice on med-low. Add the sweetened condensed milk and vanilla, mixing until smooth and creamy.
  • Follow the vanilla pudding instructions and add to the cream cheese mixture.
  • Slice the bananas and drizzle with a bit of lemon juice. It stops the bananas from turning brown, set aside.
  • Layer your dish with vanilla wafers and then bananas. Take some of your cream cheese mixture and spread it evenly on top. Repeat steps until all your bananas, vanilla wafers, and pudding mixture have been used. You may have vanilla wafers still left and that is ok. You can use some for later.
  • Take some of your leftover vanilla wafers and crumble them up for a nice garnish you can sprinkle across your banana pudding.

You can make this overnight for the flavors to set, or at least make and let chill for a few hours before serving.
