Southern Sticky Rice

There is nothing better than some good old white rice with gravy. I love how the rice absorbs the flavors, and I must have it with Hoppin John.

I have tried to make rice for years to no avail. It would be too firm, too soft, or sometimes in between, half-hard and half-soft.

Through my trials and tribulations I have figured out a rice hack I must share. It is a real hands-on experience.

You must massage the rice!! You take handfuls and literally massage it in your hand as if you were sifting sand on the beach. It causes all the starch to come out into the water. You would think that nothing good can from this, but boy are you wrong.

Your hands are making magic. I usually massage my rice 2 -3 times, and then add cold water and let the masterpiece begin.

Southern Sticky Rice

This rice recipe will be your new fan favorite. It holds all the gravy and sauces inside while still giving you the full starchy flavor of white rice.

Ingredients
  

  • white rice
  • 1 tbsp olive oil or oil of your choice
  • 1 tbsp salt

Instructions
 

  • Get the amount of rice that you willbe using and add to your pot.
  • Run cold water over the rice until water is 2 inches above the rice. Massage rice with your hand. You will notice white starch will start to come from the rice. If you see this you are doing it correctly.
  • Drain the start off of your rice and add more cold water. Repeat this process 2 -3 times to get as much rice starch out as possible.
  • Now, add cold water to the pot and make sure it is 2 inches above your rice. Add your oil and salt, make sure to stir.
  • Following the cooking time of your rice, but usually, it takes 25 minutes. Check occasionally to make sure water hasn't evaporated. If so, add a little and stir.

Southern Candied Yams

Fall is the time of year that I cant help but want some tasty southern candied yams. I love how they compliment any meal, and they are my go-to comfort food. This recipeis a great addition to collard greens and oxtails. They are so good you will be eating it alone.

Ingredients
  

  • 5 yams peeled and cut to your liking
  • 1 lemon squeezed
  • 1 stick of melted butter
  • 1 cup of brown sugar
  • 1 cup of white sugar
  • 1 teaspoon cinnamon
  • 1 pinch of salt
  • 1 pinch of nutmeg

Instructions
 

  • Grease your baking pan
  • Line you potatoes in the pan how you like.
  • Take the melted butter and pour over the yams
  • Mix your sugar, salt, cinnamon, and nutmeg in a bowl and pour over the yams evenly
  • Bake covered on 350 for 45 minutes, Uncover and scoop the juice over your yams.
  • Finish baking for 20 more minutes.
  • Let set for 10

Notes

When you cut your yams, MAKE SURE they aren't too thin or too thick. You want them to cook evenly. If they are cut at different sizes, they may fall apart.

Brown Sugar and Mustard Glazed Ham

This is my go to favorite ham recipe. It reminds me of the holidays because my mom ALWAYS made this. Every bite is nostalgic, flavorful, and juicy. All you need is a few household ingredients and you are in business. Heads up: Mustard is used, but i promise you won't even taste it. This is kid tested and mother approved.

Ingredients
  

  • Ham any size its a few ways to prepare a ham
  • 1 Cup of Brown Sugar
  • 1/4 Cup of yellow mustard
  • 1 Tablespoon of clove powder
  • 1 Tablespoon of liquid smoke

Instructions
 

  • Raw Ham- cut off excess fat,  I slice through in different directions and place in a roasting pan.
  • Spiral Ham - take out package and place in roasting pan.
  • Half  Ham - place face down.
  • Mix the brown sugar, mustard, clove powder, and liquid smoke together until it turns into a creamy paste. Pour mixture all ham into every nock and cranny. Follow you hams baking directions. I cook my ham on 350 degrees, raw hams for 4 hours, spiral hams for 2.

Slow Cooked Oxtails

If you ever ask me my favorite southern meal, I will always say oxtails and gravy. There is something about how the flavors of the meat and gravy combine with some southern sticky rice, I fall in love every time.

I love to start off my recipe by frying the oxtails before I put them in the slow cooker, it keeps the oxtail meat in place while slow cooking. As I fry my oxtail in batches I like to preheat my slow-cooker too high to get it warming up, it helps with the cooking process.

See how I lightly browned each oxtail, and they are holding in place.

I use a 10-quart slow cooker, the size is large but having 4 lbs of oxtails, I need the room

Make sure you cover the oxtails with your liquid. You can use water, chicken broth, and vegetable broth. Play around with your flavors, you may be surprised by what you create.

Slow Cooked Oxtails

This dish is a simple yet flavorful dish the entire family will love. I usually buy my oxtails from Sam's Club or BJ's because I can get a nice size quantity for a reasonable price. If you know anything about oxtails, you know it's not a lot on the bone. With this recipe, you don't want to fight over the oxtails. These oxtails has been browned and then added to the slow cooker for a succulent, mouthwatering gravy. These oxtails go so well with rice and green beans. Try with mashed potatoes, nothing will be left.

Equipment

  • slow cooker

Ingredients
  

  • 4 Pounds of Oxtails
  • 1 Large Onion
  • 4 Tablespoon of Kosher Salt your choice of salt
  • 1 Tablespoon of Pepper
  • 1 Tablespoon of Thyme
  • 1 Tablespoon of Rosemary
  • 1 Tablespoon of Garlic Powder
  • 1 Tablespoon of Onion Powder
  • 1 Bay Leaf
  • Olive Oil
  • Flour to thicken gravy

Instructions
 

  • Set your slow cooker to high. It is best to have a warm to hot slow cooker for when you add the oxtail.
  • Grease your slow cooker. Helps keep oxtails and onions from burning at the bottom.
  • Mix ALL dry ingredients together and rub on your oxtails
  • Brown on stove with olive oil.
  • Cut up your onion and put in bottom of your slow cooker.
  • Add oxtails to slow cooker
  • Take 2 cups of water and 1 Table Spoon of flour, add to the pan of oxtail drippings and stir, take the juice and pour over your oxtails in the slow cooker. Make sure the juice is covering your oxtails, if not add water or broth until oxtails are covered.
  • Add the bay leaf
  • Cook on HIGH for 4-6 hours, or LOW for 8 hours.

Notes

Oxtails goes great with rice, mashed potatoes. The gravy is so good… you will want to eat it with biscuits, too.
